Quinoa and Artichokes Salad

Ingredients

1 tub of Shasha Co’s quinoa cooked, (1 cup of quinoa to 1 1/2 cup of water, pinch of salt, dash of Shasha Co’s sunflower oil)

1 cup artichokes (chopped)

1 sweet onion (diced )

1 cup carrot (diced)

5 ½ cups cherry tomato (cut to half )

Mix all ingredients together. Dressing can be added last minute.

For the Dressing:
Mix lemon, lime, garlic, salt, pepper, paprika and freshly chopped coriander to taste.
