Bio-Bud Lentils with Curried Sweet Onion Salad

 1 Bio-Bud Lentils 1 bag 450g (soaked for 4 hours, blanched like pasta for 6-8 min) rinsed with cold water
 1 cup celery (diced)
 1 med size sweet onion (diced)
  cup fresh basil (chopped)
 1 onion (chopped)
 2 tbsp tomato paste
 ½ tbsp curry powder
 ½ tbsp turmeric
 1 clove garlic (minced)
 3 tbsp water
 salt and pepper to taste

Mix Bio-Bud Lentils, celery, sweet onion and basil.

For the dressing: Pan-fry the onion with tomato paste and curry powder until the onion is translucent. Add turmeric, garlic, salt, pepper and a few spoon of water.

Toss the dressing and salad well and serve.
